Wine and Cheese Pairing


For this post, Reagan and I tried something totally new to us. We tried pairing wine to suggested cheeses and found out that by pairing wine, it brings out crazy flavors within the mixture. We tried three different wines with three different types of cheese. We discovered that we liked some of the pairings, however, one of them had a crazy outcome! 


The Wines 
Riesling (Relax): 
Region- Germany 
Scent- Crisp apples and citrus 
Initial taste- Crisp apple, semi-sweet, citrus 
To be paired with- Gouda






 Sauvignon Blanc (Nobilo): 
Region- New Zealand (2017)
Scent- Melon, peach, and citrus
Initial taste- citrus
To be paired with-Mozzarella
 Chardonnay (Clos du Bois):
Region- California (2017)
Scent-Apple, pear, citrus
Initial taste- pear and citrus
To be paired with- Brie













                                         The Cheeses
Smoked Gouda (Dutchmark):
Scent- smoke and bacon 
Initial taste- smokey and smooth 



Mozzarella (Belgioloso): 
Scent- heavy cream 
Initial taste- super soft, air, and  creamy 



Brie (Président): 
Scent- nut and heavy cream 
Initial taste- heavy cream, nutty flavor 



The Pairing
Riesling and Gouda: The taste was quite enjoyable! The smokey bacon flavor is very strong when paired with the Riesling. The citrus in the wine was very strong. However, when paired together the flavor was very good! This duo was very light and airy together. I think these went very well together and is something everyone should try! 

Sauvignon Blanc and Mozzarella: The taste was very mellow and smooth. The mozzarella brought out strong citrus flavors of the wine. I really enjoyed this pairing! This set was quite enjoyable and I would also think everyone should try it as well! 

Chardonnay and Brie: This pairing was really hard to swallow! This pairing was super strange and I don't think it went well together at all! When paired together, the whole mixture tasted like I was eating butter out of a tub! It felt like the cheese grew and I had to swallow it whole. This was my least  favorite pairing of the three. 

This is just the first pairing of the class and I'm sure we will do another! It was weird but super fun! Besides the chardonnay and brie pairing, I think everyone should have a pairing party! Live a little and have fun!  If you have any suggestions or know of any good pairings, let me know!
